A slightly healthier alternative to noodles
1.
Peel and chop the squash. I used green hokkaido, which has very few seeds and could be cut into rings. Remove the seeds.

Put the squash in boiling water for 1-2 minutes.

Salt and pepper the pumpkin slices on both sides. Then coat in triple coating. First in flour, then in beaten egg and finally in breadcrumbs. Instead of breadcrumbs you can also use crushed corn chips.
4.
Fry in hot oil on both sides. Serve with potatoes, for example.
