If you love pizza but are looking for something a little bit different, these Chicken Bacon Ranch and Corn Pizza Boats are the perfect recipe for you! These individual pizzas are made with a cornmeal crust and topped with a flavorful chicken bacon ranch topping. You can also add any other toppings you like to customize them to your liking.
For the crust, you will need:
1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup olive oil
For the topping, you will need:
1 pound chicken, cooked and diced
8 strips bacon, cooked and diced
1/2 cup ranch dressing
1 1/2 cups shredded mozzarella cheese
To make the crust, combine the cornmeal, flour, sugar, baking powder and salt in a large bowl. In a separate bowl, whisk together the milk and olive oil. Add the wet ingredients to the dry ingredients and stir until everything is combined.
Preheat your oven to 425 degrees. Lightly grease a muffin tin with cooking spray. Divide the dough into 12 equal portions and press each one into the bottom and up the sides of a muffin cup.
In a large bowl, mix together the chicken, bacon, ranch dressing and mozzarella cheese. Divide the mixture evenly among the pizza boats.
Bake for 15-20 minutes, or until the crusts are golden brown and the cheese is melted and bubbly. Serve warm
