Power Salad

A power salad is the kind of package that will keep you going for a long time. Despite its health food nature, it still tastes good thanks to the tasty salad dressing.
Ingredients for four
300g chicken fillets 150g kale 400g cooked lentils or barley 100g feta cheese 1 handful of pine nuts or pine nuts 1 tbsp;
Salad dressing
1 handful of fresh dill 1 teaspoon of Dijon mustard 1 squeeze of lime juice 2 tablespoons of olive oil
Tip: Making a power salad is made easier when you plan a dish with lentils or barley as a side dish for the previous dish. Make a generous portion and add the rest to the salad.
Cut the kale into smaller chunks. Discard the stems and quickly rinse the leaves in boiling water. Then place in cold water and dry.
Prepare myös lentils or barley if not ready.
Cut the chicken fillets into small dice and fry quickly in a pan with olive oil until cooked.
Allow the ingredients to cool for a while. Meanwhile, you can stir in the salad dressing.
Serve the butter lettuce on plates. Put the pine nuts on the salad. Serve the salad dressing separately.
