True Caesar salad

1 pk romaine lettuce handful grated parmesan cheese 2 pk chicken breast
Caesar dressing
2 cloves garlic 2 pcs anchovies 1 tsp dijon mustard 1 pk egg yolk to taste olive oil pinches black pepper pinches tabasco 1/2 pk lemon juice 40 g grated parmesan

First make the caesar dressing – strain the garlic clove, add the finely chopped anchovies, Dijon mustard and mix together

Add one egg yolk and slowly add olive oil, stirring with a fork to make mayonnaise.

Season with black pepper, Tabasco, lemon juice and stir again.

Add grated Parmesan cheese and stir.

Place the romaine lettuce leaves in a large bowl and pour the dressing over the top. Toss and let stand.

In the meantime, prepare the chicken breasts – which you will gently butterfly on both sides, season with salt and pepper.

Roast them for 4 minutes on each side on a grill pan. Transfer to a plate and cover with foil. Let rest for a while.
8.
Serve by arranging the prepared salad on a plate and topping with the sliced grilled chicken. Finish with a dusting of grated Parmesan cheese.
