Moroccan Lentil Soup

A spicy soup inspired by Moroccan cuisine, made with vegetable broth or water, peeled red lentils, Vegetable Recipes, herbs and spices, served with coconut milk.

Ingredients:

Rule for 5-6 servings: 500 ml of vegetable broth or water 250 ml coconut milk 300 g peeled red lentils 4 pcs medium sized tomatoes 3-4 pcs garlic cloves 2 pcs carrots 1 pcs onions 1 pcs chillies 3 tbsp olive oil 1 tsp curry spice 1/4 tsp ground cumin 2 handfuls of fresh cilantro or parsley bean leaf pepper salt

Procedure:

Peel the onion, chop finely, also the chilli pepper, peel the carrots, cut them into rounds, cut the tomatoes into cubes

Add the tomatoes, pour in the stock or water, throw in the bay leaves, cook for 30 minutes

At this stage, stir the remaining crushed garlic cloves into the soup, stir, pour in the coconut milk, season the soup with salt and pepper, simmer for a while

Finally add chopped coriander leaves or parsley to the soup, stir, remove from heat, do not cook further.
