Potato stuffed with spinach
ingredients
8 pcs large potatoes 1 kg spinach 4 pcs onion 1 tbsp olive oil 2 tbsp chopped chives 1 pinch salt 4 pcs egg yolk 1/2 pcs cheese
procedure
1. Clean the potatoes well with a brush under running water and boil in the skin. 2. Pick and wash the spinach. Wash, clean and chop the onion. 3. Heat the oil in a frying pan, add the spinach and onion and sauté for about 5 minutes. Remove the Vegetable Recipes from the fat and chop coarsely. 4. Let the cooked potatoes cool, cut them lengthwise and hollow them out. Reserve the hollowed out potato flesh. 5. Mix the spinach and potato pulp. Add the chopped chives, salt and pepper and season with the chopped cheese. Finally, mix in the egg yolks. 6. Fill the hollowed out potatoes with the spinach mixture and bake in the oven at 200°C for about 5 minutes.
