Potato pie with mushrooms

600 g boiled potatoes in skin handfuls of mushrooms and mushrooms you like 3 cloves garlic handfuls of sunflower seeds pcs olive oil some chilli handfuls of chopped young parsley 1 tbsp turmeric pcs coconut fat for mixing the potatoes and greasing the mould

This pie would win a hit parade of flavours for winter evenings. I’ve made it often for caterings and to order. At home we have the advantage of our own garden mushrooms, they grow anywhere and long enough to enjoy the best specialties. Potato pie doesn’t cost much money, but it’s worth making 🙂

Smash the cooked potatoes in their skins with a fork or mash with your hands, mix with the cores, coconut oil and turmeric.

Press into a baking dish and bake at 200 C° for about 20 minutes.

In the meantime, sauté the mushrooms in the onion rings and garlic slices. The onions should be golden. Add salt and fresh parsley.

Remove the baked cake from the tin and top with the mushroom and onion mixture. It will smell so good, you won’t even have time to cut it decently on the plates 🙂 We served it with sauerkraut and pickles.
