Potato pancakes with plums

Potato pancakes fried on a frying pan, half baked in the oven together with plum halves and poppy seeds, both halves then glued together with plum jam, served sprinkled with sugar.

Ingredients:

200 g ripe plums 100 g plum jam 50 g ground poppy 50 g poppy sugar + for sprinkling oil for frying For batter: 1 teaspoon of granulated sugar 1 tbsp smooth flour 500 g of potatoes 1 piece of egg pinch of salt

Procedure:

1. Peel the potatoes, grate them into coarse long noodles, squeeze out the excess water, add the egg, plain flour, a teaspoon of sugar, a pinch of salt and mix everything well
2. Slowly fry the prepared batter on a frying pan or a frying pan brushed with oil into small light potato pancakes (so that they are not completely baked)
3. Then spread them out on a baking tray lined with baking paper and cover half of the potato pancakes with plum halves and sprinkle with ground poppy seeds mixed with icing sugar, place in an oven heated to 170 °C and bake until golden brown
4. Brush the finished potato pancakes without plums with plum jam, cover them with potato pancakes with plum, sugar them and serve immediately.
