800 g boiled potatoes in skin 1/2 KL salt 50 g starch flour 150 g coarse semolina 1 pk egg 150 g coarse flour

Peel the boiled potatoes, let them cool and then grate them on a board. Add salt, starch flour, semolina, break the egg in the middle and work into a firm dough, adding flour as you go along.

Divide the dough into equal parts and form into rolls. Place in boiling salted water and cook slowly for about 20 min.

Remove the cooked dumplings and cut into slices. Serve them as a side dish, e.g. with roast pork.
