500 g potatoes cooked in the skin 60 g cornstarch 150 g semi-coarse flour 250 g ground poppy 60 g semolina sugar 6 tbsp milk to taste powdered sugar 120 g melted butter a little salt

1. Leave the potatoes boiled in their skins to cool, peel them and grate them. Add the cornstarch and flour and make a stiffer dough. 2. Add the poppy seeds and caster sugar to the boiling milk. Stir the poppy seed filling well, set aside and leave to cool. 3. Roll out the dough on a floured board and cut it into squares. Put a teaspoon of filling on each one and make a ball. Cook them in boiling slightly salted water. 4. Take out the cooked balls with a hole-punched ladle, pour butter over them, sprinkle with icing sugar mixed with poppy seeds and serve.
