3. Cut the cod into 4 portions, put in a pot with hot oil, add onion, rice, wine, stewed and peeled tomatoes, crushed garlic, ground pepper, salt and simmer under the lid for 10 minutes
4. Add the finely chopped parsley and simmer for another 10 minutes.
