Pork tenderloin in prosciutto

Simple but proven classic.

Wash and thoroughly clean the pork tenderloin. Dry gently with a towel and season with salt and pepper on each side. With the tip of a knife, make small incisions and press the plums into them.

Place the prosciutto on a board so that the whole tenderloin is wrapped in it. The prosciutto pieces should overlap a little so that the ”jacket” holds together.

Heat the oil in a frying pan and sear the tenderloin fiercely on each side. Transfer to a baking tray, add a tablespoon of butter, cover with foil and place in the oven at 150 degrees for 10-15 minutes.

There is still some fat left in the pan and you can fry extra plums.
