It’s apple time, so delight your loved ones with the delicate flavour of this fruit.
1.
Prepare the ingredients for the fillings + thawed puff pastry.
2.
Peel the apples and cut them into cubes. In a saucepan caramelize sugar add 1tsp butter. Pour in apples simmer until semi-soft 5-7minutes, set aside. Roll out half of puff pastry thinly using a rolling pin, transfer to a 29x39cm baking tray and raise the sides a little, see photo.
3.
Place the round biscuits on the pastry, flat side down.
4.
Cook the vanilla pudding in the milk and leave to cool, stirring occasionally. Carefully spread the pudding over the biscuits then spread the apple filling over the biscuits, see photo.
5.
Place the second part of the rolled out dough on top using a rolling pin. Press lightly with a fork to keep the dough from collapsing. Preheat the oven to 230 degrees bake for 45-50 minutes until golden. When the baking is cool, sprinkle with icing sugar. Enjoy!
