Pavlova Dessert

A famous dessert from Australia, reminiscent of the ballet tutu of the famous Russian ballerina after whom it is named and was once prepared as a welcome gift for her. Recipe from the Australian episode of “Setting the Table”.

Procedure:
1. Line a flat plate with baking paper, brush with butter and sprinkle with starch
2. Beat the egg whites with a mixer until stiff, gradually beat in the icing sugar, beating until dissolved
3. Finally, stir in the starch, vinegar and vanilla extract, transfer to the prepared plate, forming a large lump
4. Bake in a preheated oven at 120 °C for 90 minutes, turn off the oven, open the door and let cool slowly (the dessert will crack and fall slightly, which is fine!)
5. Generously top the cooled surface with whipped cream and garnish with sliced fruit.
Recommendation:
Choose fruit according to the season, alternating sour flavours with neutral ones. For example, banana has a neutral taste.

Whites should be at room temperature when whipped, as should the other ingredients. Pavlova dessert is also prepared in the form of small meringues, which are then stacked into a pyramid and topped with whipped cream.
