Stuffed tortillas with tofu

4 pcs tortilla 1 pcs tofu 100 g corn 100 g red beans 1 tbsp passé tomatoes 1 pcs red onion 2 pcs garlic 1 tbsp olive oil

The perfect combination of flavours you will love. Crunchy tofu in tortillas.

First we prepare the tofu. Place baking paper on a baking sheet and spread the tofu evenly on the baking sheet. Season with salt, pepper, thyme and paprika. Place in the oven at 200 degrees and bake until golden, about 25 minutes.

In the meantime, put the oil in a frying pan, chop the garlic and red onion. Fry until golden brown. Add the beans, corn and a spoonful of the passé tomatoes. Mix well, season with pepper and simmer for a while. If you like spicy, you can add chillies too.

In a second frying pan, fry the tortillas on each side until crispy. Fill the tortilla with the vegetable mixture, add fresh Vegetable Recipes to taste (tomatoes, peppers, cucumber…) and top with the baked tofu.
