Panforte di Natale – Italian Christmas Gingerbread

This gingerbread cake is one of the traditional Christmas pastries on the Italian table. Of course, there are many variations of this recipe.

1. Grind half of the above amount of almonds (mix the other half with the pine seeds into the batter whole)
2. Heat the honey in a saucepan until it becomes transparent, then remove it from the heat source
3. Add the cooking chocolate, ground and whole almonds, pine seeds, candied fruit, orange zest, pepper, cinnamon, nutmeg, vanilla sugar and flour to the honey and stir with a food processor until the batter is smooth, adding the flour carefully, in small batches, so that it combines well with the other ingredients
4. Pour the batter into a buttered and floured cake tin or baking dish
5. Bake in a preheated oven at 170-180 °C for about 30 minutes, the finished gingerbread should be firm and nicely golden
