Vegetable pancakes with cheese, McCain Crispers with herb dip

This streetfood delicacy, which you may know from markets and festivals, can be prepared at home and you don’t even have to be a very experienced cook. As the name suggests, it’s a meatless version of fried pancakes that can be enjoyed with, for example, McCain Crispers seasoned with a homemade herb dip.


2 pcs of carrots 2 pcs of egg 1 pk of zucchini 150 g of hard cheese (e.g. cheddar cheese) 1 handful of breadcrumbs 1 bunch of oregano 1 package of McCain Crispers sour cream chopped herbs pollen pepper salt


  • Coarsely grate the courgette, lightly salt and leave to “sweat” for 20 minutes.
  • To the zucchini add coarsely grated carrots, diced cheese, eggs, chopped herbs, pepper and salt to taste and breadcrumbs according to thickness.
  • Shape into thin pancakes and fry in a pan on both sides until golden brown.
  • In the meantime, prepare McCain Crispers according to package directions.
  • Serve with a salad of field lettuce and radishes, also add a simple dip of sour cream, crushed garlic, salt and pepper.
