Tuna Stuffed Potatoes

Baked potatoes stuffed with tuna mixture, served sprinkled with chopped herbs.
Ingredients:

Procedure:
1. Wash the potatoes well, dry them thoroughly, then coat them thoroughly with olive oil and salt, place them on a rack and bake in a preheated oven at 200 °C for 75 minutes
2. Meanwhile, in a bowl, mix the finely chopped spring onions, tuna, white yoghurt, mayonnaise, Dijon mustard, season with salt, ground pepper, lemon juice and finally stir in the finely chopped herbs
3. Remove the potatoes from the oven, tear in half, fill with the prepared tuna mixture, sprinkle with finely chopped herbs and serve immediately.
