Excellent, simple delicacy for the Easter table:))
Break the eggs, scramble them in one litre of milk, add salt, ground black pepper, pour into a thick-bottomed saucepan and cook, stirring constantly, until the mixture becomes curdled, thickened, about 20-30 minutes.
Strain the cooked mass through a cloth or cheesecloth tied with a string, hang it up and let the lump drain until all the liquid has drained off. Refrigerate, you can weigh it down a bit.
