Cholodec

Cholodec is an aspic with meat, eggs and Vegetable Recipes, similar to our sulc. Recipe from Russian, Ukrainian, Belarusian and Polish cuisine.

Ingredients:

1 pk back pork knuckle 2 pcs pork legs 2 pcs carrots 4 pcs eggs 4 pcs sour pickles 100 g of cucumber spring onions bean leaves new spices whole pepper vinegar pepper salt

Procedure:

Place the cleaned knee and legs in a pot, add salt, bay leaf, allspice, and whole pepper. Cook until the meat separates from the bones, scooping up the foam from the surface and fat with a ladle as it cooks to make the broth clear.

Drain and let the meat cool. Wipe the cooked lean meat from the knee, cut into pieces.

Into smaller glass bowls, put the pieces of meat, rounds of boiled eggs, pieces of boiled carrots, chopped cucumber, peas, chopped spring onions. Pour in the cooled broth, which we have previously seasoned with pepper, salt, vinegar and let it solidify.

Remove from bowls, garnish, perhaps with pieces of lettuce, chopped onion, lemon wedges, serve with bread.
