Orange Balzamiin Asparagus Recipe

This is a great recipe to make the most of fresh asparagus, which is available almost all year round these days. However, you can use frozen asparagus if necessary. The dressing has the slight sweetness of citrus fruits and orange juices, plus a rich goodness of balsamic vinegar cooked into a flavoured syrup. A dash of wood sesame seeds is the icing on the cake. It’s so easy to make, but so elegant.
What you’ll need

How to make it
Toast sesame seeds in a dry fryer until golden and fragrant. Put to one side.
Whisk in orange juice, balsamic vinegar and olive oil . Season to taste with kosher salt and freshly ground pepper. Pour into a small saucepan and simmer. Cook for 3 to 4 minutes until reduced by half. It should be thickened and almost syrupy. Set aside.
Steam the asparagus in a rack in a covered pot for 3 to 5 minutes, until you can easily pierce the thicker part of the stem with the tip of an arrow, but it is still firm and colorful.
Best steamed asparagus with a reduced vinaigrette mist and a sprinkle of toasted sesame seeds.
Note: good quality aged balsamic vinegar is thick and rich with a deep flavor. If you use a lesser quality, you may need to simmer the sauce for longer to cook it.
