Olive bread with walnuts

650 g spelt plain flour 20 ml olive oil 1 tbsp butter 1 KL salt

1 cube yeast 1 KL sugar 100 ml water 200 g tomatoes 200 g olives 2 handfuls walnuts 1 pk chilli pepper

1. Make a sourdough starter with yeast, sugar and warm water. Leave to swell. 2. Put the flour, melted butter, salt and the swollen sourdough starter in a bowl. 3. If necessary, add a little water and work into a stiff dough which is left to rise for 40 minutes. 4. Meanwhile, cut the olives, tomatoes and chilli into small pieces. Chop the nuts. 5. Stir the tomatoes into the risen dough, then the olives and chilli and finally the nuts. 6. Transfer the dough to a baking tray lined with baking paper. Bake for 35-40 minutes at 200 degrees. 7. Brush the freshly baked bread with olive oil and leave to cool. 8. Enjoy!
