Old Bohemian Sulc

According to the recipe of our great-grandmothers prepared tasty sulc, otherwise also huspenina or tlačenka.

Ingredients:

1 piece of pork knee 1 piece of pork tongue ./td> 1 pcs pork leg 1 pcs carrots 1 pc parsley 1/2 pc celery 1/2 pcs onion 1/4 pcs of casing 1 handful dried mushrooms 3 tbsp vinegar 2 tbsp sugar a little celery and parsley whole pepper bobacco leaf thyme

Procedure:

Place the cleaned knuckle, leg and tongue in cold salted water and cook until almost tender.

Add all the Vegetable Recipes, mushrooms and spices, add the stock and cook again for about 20 minutes.

Remove the meat, strain the soup and let it cool, then spoon off all the fat.

Bring the soup to the boil again, season with vinegar and sugar and add the meat, cut into cubes.

Add the diced cooked carrots, let simmer briefly, then pour into a bowl and set aside to cool.

Cut the solidified foie gras into thicker slices and serve with finely chopped onions, vinegar or lemon juice.

Recommendation:

Serve bread or white bread as a side dish.
