Äyriäispasta takes your mind to the seaside. You’ll find yourself in the middle of the sea with the best of both worlds.but try to add a few mussels. They have a zesty umami flavour that fits perfectly into this recipe. The tube pasties are good for soaking up the rich creamy sauce.
Ingredients for four
400g penne or rigatoni pasta 300g rice 2 dl of cream 1 dl of cream 1 dl of white wine(or 2 tbsp white wine vinegar) 1/2 tsp white pepper 2 cloves of garlic 1 tbsp salt 1 tbsp olive oil fresh thyme
Tip: Frozen/thickened rice for a delicious taste. It is difficult to find others in Finland. You can find ready-made mixtures in the freezer for the recipe.
Cook the pasta until it is crispy in plenty of water with a generous amount of salt. Meanwhile, cut the garlic cloves into very thin slices. Put in a pan with the olive oil and start to cook.
Prepare the yoghurt and pour the myös into the pan. Bring the mixture to the boil until dry. Pour the wine into the pan and season with pepper. Cook and simmer until dry.
Stir in the cream and cream of tartar. Add a generous sprinkling of fresh thyme.
Stir the sieved pasta into the sauce.
Serve the pasta immediately with fresh thyme and crusty bread.
