Normandy Cauliflower Cream
A creamy soup prepared from boiled cauliflower, beef broth, egg yolks, milk and other ingredients.
Ingredients:
Procedure:
1. Clean and boil the cauliflower in salted water
2. Add the rest of the water to the stock and strain the soft cauliflower into the prepared liquid
3. Boil for about 8 minutes and then add 2/
3 batches of milk, boil again briefly
4. Remove, add butter and stir in egg yolks beaten in the rest of the milk
5. Season the soup with pepper and salt to taste.
