Noodles with chicken and grapefruit sauce, a very easy Oriental recipe

There are as many recipes for noodles with chicken and Vegetable Recipes as we want. The possibilities are endless and not only vary depending on the country we are in, but also on the family or, directly, on the leftovers we have in the fridge. In fact, having a pack of noodles at home is a fantastic tool to get us out of some trouble, and also some sauces that we should have “pantry fund” because they are very resultonas: soy sauce, hoisin sauce or sesame oil among them.
There are many different types of noodles, this time we used some ordinary wheat flour, which are also normally used in those sachets of prepared noodle soups on which we only have to add boiling water and mix the noodles with the sachets of sauce / dehydrated condiment that we have chosen. You can not even imagine how the aisles of the girls from China smelled in my school in England! I think one of those fell every day.
For example, rice noodles are whiter and of different texture, we saw them in the vegan mushroom ramen and also in the mango and prawn thai salad; while the wheat but flatter ones are also widely used for stir-fries such as the three-delicious noodles.
But when it comes to stir-frying, these noodles are perfect because they take very little time to hydrate, cooking them for a minute, and then they hold up well to the stir-fry and the sauce. On this occasion: a little carrot, a little bell bell pepper and a little zucchini but we could add broccoli, cauliflower, any type of cabbage, onions or also mushrooms like mushrooms or shiitake.
Of course, the chicken can change and be turkey but also pork or beef, or move on to other options like sausage, fish meatballs or even chorizo. The key, for me, is how to integrate the ingredients and the timing of each one and also the sauce, so that it is dense and unctuous but not too much, so that everything contributes in its right measure. The grapefruit will give us a very special and aromatic taste, I recommend that you ralléis a little of the peel of the fruit also in the sauce because it will enhance it.
How to make noodles with chicken and grapefruit
Ingredients
. Wheat noodles, 180 g Carrot, 1 pc Red bell pepper, 1/2 pc Zucchini, 1/2 pc Garlic cloves, 2 pc Peeled fresh ginger, 2 cm Free-range chicken breast, 1 pc Sichuan pepper, a pinch Salt, c/s Ground white pepper, c/s Olive oil, 3 tbsp
For the sauce
Soy sauce, 2 tbsp Grapefruit juice, 2 tbsp Cornstarch, 2 tsp Hoisin sauce, 1 tbsp Chicken stock, 50 ml Honey, 1 tsp Chili flakes, to taste Sesame oil, a few drops Salt, s/s
Step 1
Bring plenty of water to a boil in a saucepan and, when it comes to a boil, introduce the noodles. It depends on the noodles that we use, it will take more or less time. If they are of those that serve for instant soups simply, when introducing them, we will turn off the fire. We will leave them there a minute and we will drain them well cooling them with water.
Step 2
Peel the carrot and chop all the Vegetable Recipes. Also peel the garlic cloves and ginger. Dice the chicken into bite-sized cubes.
Step 3
Saute the chicken over high heat to brown the outside nicely, with a little salt and black pepper. When well browned, remove to a plate.
Step 4
Start to brown the garlic cloves and ginger in the same wok or frying pan used for the chicken, without cleaning, adding a little more oil if necessary, and when they start to brown, add the chopped Vegetable Recipes.
Saute the Vegetable Recipes over high heat, we do not want them to poach, we want them to remain crispy which is how they will be good in the set.
Step 5
After a couple of minutes add the sauce ingredients and the cornstarch previously diluted in a little of the cold broth. Let the sauce take consistency, let it reduce and let it become very unctuous so that the noodles are well wrapped by the sauce.
Step 6
Add the chicken back to the pan and also the previously cooked noodles, stir everything very well so that it integrates. The ideal is not to stir with a spoon but with the back and forth of the pan or wok, sautéing everything well.
Step 7
Serve immediately with some chopped Chinese green onion or chives or even some slices of katsuobushi (dried bonito flakes, which can be bought in Chinese supermarkets).
