New Year’s salad

5 kg potatoes boiled in the peel 7 dl home boiled cucumbers 1 cup boiled carrots and peas 420 ml mayonnaise Hellmans 2 pcs onion 2 tbsp mustard 1 can corn pcs salt, ground black pepper pcs vinegar pcs minced red onion
procedure

Wash the peanuts and put them to boil in salted water. Drain the cooked ones, peel them, and press them through a sieve into a properly sized bowl.

Pour half a litre of water into a saucepan, add two finely chopped onions, two teaspoons of salt, half a teaspoon of pepper, ground red pepper and two tablespoons of vinegar. Bring to the boil and simmer for a while to cook the onions a little.

Pour the finished sauce over the potatoes and stir well. Add the drained corn, peas, carrots, grated cucumbers, mayonnaise, a spoonful of mustard and mix properly.

What is left in the jar from the mayonnaise, wash properly with water and pour also on the potatoes.

While the salad is stirring, you can possibly add salt, but the salad will still be different the next day, more alive, so that’s when you’ll find out what else is needed.

If you would like it to be a little more acidic, add the juice from the cucumbers.
