New Year’s Knee Slow Roasted with Black Beer and Vegetable Recipes

New Year’s recipe for tasty, slow roasted meat from blogger Karolína Kamberská. Let it bake overnight, then enjoy it the next day!

Ingredients:

1 pk meaty pork knuckle 1 pk regular sized carrots 1 pc medium celery 1 pc 510 cm fresh horseradish 5 pc bean leaves 4 pcs thin parsley or 1 parsnip 2 pcs onions 500 ml black beer 1 tbsp whole cumin 1/2 tbsp whole pepper 1/2 tsp oregano 1-2 sprigs rosemary salt To serve: Grated horseradish, parsley, mustard, bread

Procedure:

Cut the knees in the fleshier part along the bone to make them easier to roast and salt them on all sides

Clean the onion and all the Vegetable Recipes, cut into coarser pieces and place in the bottom of a baking dish, cast iron baking dish with a lid, etc. Place the knees on top of the Vegetable Recipes, add all the spices and herbs and pour in the whole beer

Cover with foil, place in the oven at 120 degrees (hot air) and bake well covered for at least 6 hours, but easily 8. The meat should fall off the bone at the end. Go to sleep, you don’t need to do anything with the meat for 6-7 hours, but if you stay awake and turn the meat halfway through the baking process, you’ll do fine

If the meat is tender at the end of the baking process but doesn’t have a nice golden crust, you can finish it uncovered at high heat (e.g.

Remove the knee, cover it again and let it rest for a while

Then cut the meat from the bones and serve it with the delicious baked juices, roasted Vegetable Recipes, freshly grated horseradish, mustard and even fresh bread to mop up the juices.
