Ingredients:
1 (15-ounce) can black beans, rinsed and drained
1/2 cup chunky salsa
1/2 cup sour cream
1/4 cup chopped fresh cilantro
1 tablespoon freshly squeezed lime juice
1 teaspoon chili powder
1/4 teaspoon ground cumin
8 ounces sharp cheddar cheese, shredded
8 ounces Monterey Jack cheese, shredded
30-40 large tortilla chips
Optional toppings: diced avocado, diced tomatoes, sliced jalapeños
Instructions:
Preheat oven to 350°F.
In a medium bowl, combine black beans, salsa, sour cream, cilantro, lime juice, chili powder, and cumin. Set aside.
In a large bowl, mix together cheddar and Monterey Jack cheeses.
Spread 1/2 cup of the black bean mixture over the bottom of a 9×13-inch baking dish. Top with a layer of tortilla chips, followed by a layer of the cheese mixture. Repeat layering.
Bake for 15-20 minutes, or until the cheese is melted and bubbly.
