Combine flour, egg, salt, water and make a semi-soft dough. I determine the quantity individually, depending on how much pie we want to make.

Salt and boil the potatoes until soft, drain and mash, add the bryndza, butter and make a potato-bryndza filling.
3.
Roll out the dough , cut out rounds and stuff with the filling. Boil the pierogi well and drain . Use melted butter for finishing, or grease with bacon, garnish with chives, sour cream or sprinkle with cottage cheese.
