Mushroom cookies

250 g puff pastry 50 g dried mushrooms 120 g coloured peppers 1 pk onion to taste salt to taste ground black pepper 40 g hard grated cheese 1 tbsp fresh herbs 2 pk spring onions a little oil 2 pk egg yolk for rubbing
step
1. Soak the dried mushrooms in cold water for at least half an hour. Drain them and squeeze the water out of them thoroughly. Fry the finely chopped onion with the peppers in hot oil. 2. Add the mushrooms, sliced spring onions, season the mixture with salt and pepper and simmer. Remove from the heat and stir in the grated cheese. 3. Roll out the puff pastry on a floured board. Cut it into equal squares, put a teaspoon of filling in each and shape the dough into a parcel. Stick the edges together with the beaten egg yolk. Place the parcels on a baking tray, brush with the egg yolk and bake in a preheated oven until golden.
