Oven roasted eggplants with Vegetable Recipes.

Procedure:
1. Cut the washed eggplants into slices, salt them and let them stand for half an hour
2. Then dry them and fry them on both sides in hot oil
3. Wash one tomato in boiling water, peel, cut into small pieces and add to the mixture together with finely chopped parsley
5. Spread half of the mixture in a baking dish, arrange half of the aubergines on top of the mixture, top with the vegetable mixture and aubergines again
