Mug granola cake with mascarpone

Since we couldn’t agree on which cookie to bake today, I combined our favorite flavors. I made a delicious granola cake today with mascarpone. It is yummy.

In a bowl, whisk the eggs with the vanilla sugar until frothy. Add the oil and mix for a while. Add the granola and stir until dissolved.

Then add the plain flour and baking powder. Stir lightly and pour the prepared dough onto a baking sheet lined with baking paper. Place in a preheated oven at 180 degrees for about 20 minutes.

Pour the prepared instant coffee over the baked cake and brush with jam. I used our homemade apricot jam, but I also use cherry jam. It is better to choose a less sweet jam. Leave the cake to cool.

Mix mascarpone and whipping cream (200ml) in a bowl. Do not stir for long so that the cream does not curdle. I didn’t add any sugar, the cake is quite sweet.

Melt the chocolate in a water bath and progressively add the whipping cream (about 100ml). Spread the mascarpone over the cooled cake and pour the melted chocolate over everything.

We didn’t wait for the cake to set. It tasted delicious. Enjoy!
