Mini-Pizza with eggplant, minced meat and cheese

For a complete dish that’s filling and light at the same time, eggplant, ground meat and cheese mini pizzas are just what you need. This recipe will take you only a few minutes to be ready, and without too much effort.
To have a light dish we replace the pizza dough in the original version with eggplant slices, the taste is better and will please the whole family.
The eggplant mini pizzas are complete; Ideal if you are on a diet, not very caloric and well satiating.
Ingredients for 4 servings:
2 large eggplants 400 g ground beef A few cherry tomatoes 40 g grated Parmesan 60 ml water 2 onions 1 clove of garlic Chopped parsley 2 tablespoons olive oil Paprika Salt and pepper
Preparation :
Wash the eggplants then slice them, then make slashes in the flesh and put them in an ovenproof dish.
Put the eggplants to bake in the oven at 180 ° for 40 minutes, then, let cool.
Cook the onions and garlic in a pan with olive oil, when they are golden, add the meat and continue cooking, stirring with a wooden spoon.
Add a little water, paprika, salt, pepper and parsley. At the same time slice the cherry tomatoes.
Stuff the eggplants with the prepared topping, add the tomato slices and then sprinkle with parmesan cheese.
Put your eggplant, ground meat and cheese mini-pizza in the oven for a few minutes before serving.
