Million Dollar Soup

In the past, a soup with small semolina called millionaire’s soup was served on New Year’s Eve. It wasn’t a soup that was worth a million crowns, but a superstition to hold on to a person’s money for another year.

Ingredients:

Rule for 4 servings: 1 l of vegetable stock

large handful of baby grits 1 heaping tablespoon butter 2 pieces small root parsley 1 pc medium sized carrots 1/4 pc celery 1 pc axe pepper salt

Procedure:

Clean the parsley with the carrots and celery, then grate the Vegetable Recipes on a coarse grater, sauté the grated Vegetable Recipes in butter in a saucepan

Pour in the vegetable broth, add a handful of semolina, stir and simmer for a while

Finally, stir the beaten egg into the soup, season the soup with salt and pepper

Decorate individual portions on the plate with chopped fresh or dry parsley.
