1. Put the bones and beef in a saucepan of cold water and bring slowly to the boil. Using a spoon, skim off the foam. Next, place the cleaned and gutted hen into the soup along with the calf’s leg, let it come to the boil and skim off the foam again. As a side dish to the soup, beetroot, spiced cucumbers, tomato salad and grated horseradish are suitable.
