Firm cuts that taste beautifully after coffee:
1.
CESTO: Beat egg yolks and sugar until foamy, add oil, water, flour mixed with baking powder and coffee. Finally, stir in the cream of tartar.
2.
Repeat this once more -2nd slice (casing).
3.
Bake for 25 minutes at 200 degrees (baking sheet 30×40 cm).
4.
FILLING: Make a thick pudding with milk sugar and custard and let it cool. Then stir it into the Hera.
5.
Topping: Beat the whipping cream with vanilla and thickener. Progressively add the mascarpone. Take some of the cream and stir some coffee into the rest.
6.
Spread the jam over the pastry, layer the cream and weigh it down with the second pastry.
7.
Then brush again with jam and top with cream.
8.
Use the white topping cream to make a decoration on the slices and add the fondant leaves.
9.
Good taste!
