1 kg salmon fillets 300 g coarse sea salt 100 g sugar 1 handful chopped dill 1 KL lemon zest

1. In a bowl, mix together the sugar, salt, lemon zest and chopped dill. Put half of the marinade in a bag, place the salmon on top and cover with the remaining marinade. 2. Seal the bag tightly, place it on a plate and refrigerate. Cover with milk and refrigerate for at least 24 hours. Occasionally turn it upside down. 3. Before serving, remove the salmon from the refrigerator. Wash it under cold water and pat dry. It can be sprinkled with a little more dill and sliced thinly. Serve on a piece of bread with, for example, cream cheese.
