Marinated olives

Marinated olives are a familiar sight in southern European countries, in restaurants and markets. Simple marinating gives the olives the flavour you want.
Ingredients for six
200g good quality green or brown olives (black olives are of poor quality and are not very tasty) 1 organic lemon 1 clove of garlic 1 teaspoon of black pepper (use rose or green pepper to get myriad flavours) 1 tsp.1/2 tsp cumin seeds 1 handful of parsley 1/2 dl good quality olive oil
Tip: You can use your imagination when marinating olives. Chillies, different herbs, Christmas spices, anchovies, etc.
Sieve the olives, rinse and dry.
Peel the lemon and cut off the zest. Squeeze the juice into a bowl. Chop the zest into the juice.
Scatter some pepper to taste and add the cumin seeds. Chop the parsley and garlic into the sauce.
Stir in the olives and drizzle with olive oil. Marinate in cold water for a couple of hours, until soft.
Serve the marinated olives and garnish with parsley.
