To make a deliciously sweet and fruity Apricot infused vermouth, you’ll need:
1 bottle of good quality dry vermouth
1/2 pound of fresh or frozen apricots
1/4 cup of sugar
1/4 cup of water
Begin by washing the apricots and cutting them in half. If using fresh apricots, remove the pits. If using frozen apricots, there’s no need to thaw them first.
In a medium saucepan, combines the apricots, sugar and water. Bring mixture to a simmer over medium heat, stirring occasionally. Once the sugar has dissolved and the apricots are soft, remove from heat.
Pour the apricot mixture into a clean, dry bottle or jar. Add the vermouth and stir gently to combine. Seal the bottle or jar and store in a cool, dark place for at least 2 weeks, or up to 2 months.
When ready to use, strain the vermouth through a fine mesh strainer or coffee filter. Pour into a clean bottle or jar and store in the refrigerator for up to 2 months.
