300 g macaroni 10 g butter 1 tbsp spelt flour 1 tsp crushed garlic 1 tsp dried onion 1 tsp granulated garlic 1 tsp oregano 1 tsp ground cayenne pepper ground black pepper salt 300 ml whole milk 150 g cheddar 1 pk spring onion

On weekdays, when time is more precious to me than saffron, a quick, tasty and hearty meal guaranteed to please everyone comes in handy. One favourite is macaroni and cheese, and this is the way I like to cook it.

Cook the pasta in boiling salted water according to the instructions.

In a deep frying pan (which can be put in the oven), melt the butter and fry the flour and garlic in it over a medium-low heat, stirring constantly. After a minute, add the dried onion, granulated garlic, oregano, cayenne pepper and salt and pepper to taste. Stir and after another minute, slowly add the cold milk, stirring constantly. Stir until the mixture thickens and all lumps disappear.

Grate the cheddar and add two-thirds of it to the pan, set the rest aside for later. Stir the drained pasta just as thoroughly into the mixture in the pan. Sprinkle with the remaining grated cheese.

Place the pan in a preheated oven at 200°C for 10 minutes. Turn on the top grill for the last 2 minutes to let the surface cheese cook to perfection.
