Lunch-braised pork mince biscuit with cheddar and apples

Perfect for breakfast, lunch or dinner – this delicious biscuit sandwich recipe is stacked high with crispy boneless lunch pork, cheddar cheese and sweet seasoned apples.

What you’ll need

For the spiced apples. 1 cup buttermilk 5 cups peanut oil for frying For the sandwich. Once you have the pork out, place it back in the lock and cover with buttermilk. Let sit for at least an hour. Once the pork is marinated, fill a cast iron bottle with oil and heat to 360 degrees. In a small bowl, add the flour and creole seasoning and stir. Cool the pork in the buttermilk-flour mixture, then in buttermilk, then again in flour and shake to remove the grit. Gently coat the breaded pork in oil and cook until cooked through. Remove from the oil and place a paper towel over the pork and sprinkle with salt. Meanwhile, start the seasoned apples. Melt the small pan over medium heat and add the brown sugar, cinnamon and vanilla. When the sugar has dissolved and the mixture begins to bubble, add the peeled apples and stir until coated. Turn the heat to low and cook until the apples are softened. Remove from heat, cover and drain. Once both ingredients are ready, it’s time to build the sandwich. Carefully divide the loaf in half and place half on the bottom of the cheddar. Add the lunch pork mince, apples and remaining cheese. Top the remaining half with the biscuit and serve!
