1 tbsp vegetable oil 1 pk onion 1 clove garlic 1/2 tsp ground cumin 1/2 tsp ground coriander 450 g tomatoes without skin and seeds 3/4 cup lentils 5 cups vegetable broth 1 pinch salt 1 pinch ground black pepper 1 pinch ground coriander

1. Heat the oil in a saucepan, add the chopped onion and fry for 5 minutes until the onion is soft. 2. Add garlic, cumin, coriander, lentils, tomatoes, stir and roast for 4 minutes. Pour in the stock, bring to the boil, reduce the heat and simmer for 30 – 40 minutes. Season with salt and pepper. 3. Set the pot aside and let the soup cool. Then blend it into a fine puree. Pour back into the pot, reheat and divide into 4 heated bowls.
