Leafing cheese puffs

Cesto:
500 g plain flour 200 g semi-coarse flour 50 g butter 4 tbsp Greek yoghurt 3.5 dl milk 21 g yeast 1 pk egg yolk
You still need
1 tbsp salt 400 g grated cheese 100 g butter 1 pk egg yolk 1 tbsp yoghurt to taste cornstarch to taste salt

Who doesn’t like pagachiki ??? With these scones you are not only guaranteed to taste but also to puff!!! Just boldly try them, they are really delicious.

From the above ingredients, make a semi-soft dough, which is already separated from the bowl. Knead the finished dough briefly into a loaf and leave on a floured board to rise for 30 minutes.

While the dough is rising, prepare everything else you will need. That is, grated cheese, butter, starch for cooking, egg yolk and yoghurt for spreading on the pancakes.

Using the starch, roll out the risen dough into a large rectangle. Spread with soft butter, sprinkle with cheese and sprinkle with salt. Finally, fold the dough classically as for pagáčiki, with one exception, and that is that between folding it a little scratch, so that it nicely puffed 🙂 Leave the dough covered for 30 minutes to rise.

After the time has elapsed, repeat the previous step. That is, fold the pagáčiky together 2x. For a better idea of the progress you can also watch my video

When the dough has risen after the second folding, roll it out to an inch thickness. Using a pastry cutter, cut out the pagacakes, place them on a baking sheet and let them rise, covered, for another 15 minutes

Before baking, brush them with egg yolk mixed with yoghurt and garnish with cheese. Bake at 190 °C for about 20 minutes.
