Lamb Rogan Josh

In the Indian Alps of Kashmir, you can feast on a Rogan Josh-style lamb stew. It’s a delicious dish.
Ingredients for four
500g lamb roast 2 onions 2 tbsp butter 1 tsp tomato paste 1 chilli 5 cloves of garlic 1 pk.4 tablespoons of unflavoured yoghurt
Spices & seasonings; masala
1 tbsp garam masala 1 tbsp coriander powder 1 tbsp jeera 1/2 tsp cinnamon 3 curry leaves 1 tsp asafoetida (if available (Asian shops)) 2 tsp salt

Peel and chop the onions and ginger; mix them together.
Organize a fair amount of lämpö and a generous amount of butter. Add the onion-garlic gingerääriseos and let it simmer. When the onion is golden brown, add the chopped spices and chilli.
Työstä dice the lamb into small cubes. Drop them into a casserole dish, a few at a time, and fry them to the surface.
Mix my tomato paste into the casserole dish and add water to cover the meat. Start simmering under the lid with a small bubble. When the sauce is very thick (1h – 2h) mix in a couple of spoonfuls of yoghurt. Serve with a Rogan Josh yoghurt eye and torn coriander.
