Laksa – noodle soup

Liver is a noodle soup from Southeast Asia. It is typically made with rice noodles. The dish doesn’t need meat, but you can easily dip yesterday’s roast or grilled chicken in it.
Ingredients for four
100g rice noodles 3 dl coconut milk 1 l water 150g 200g shrimps or prawnsor grilled chicken* 3 tablespoons soy 3 potatoes 2 carrots 1 lime 2 onions 4 cloves of garlic 2 cm pasta 2 tablespoons of garlic 1 tbsp;1 tsp. ginger 1 tsp. chillies 1-4 chillies to taste 1 tsp. turmeric 3 tbsp. tomato puree 1 tbsp; 2 tbsp cane sugar fresh coriander for garnish
Tip* The liver does not need meat, but you can add more if you like.
Peel the potatoes and carrots, chop finely and bring to the boil.
Peel and grate the garlic and ginger into the soup. Squeeze the lime. Add all the spices to the soy and tomato puree.
Cook the potatoes until tender. If you are cooking meat, add it at this point. Pour myös coconut milk into the saucepan, bring to the boil and stir the noodles into the soup.
Remove the liquor to the pan to wait for the noodles to soften.
Garnish the dishes with torn coriander leaves.
