Pork ribs are a food that has always been with us. In Spain, in the past, it was customary to eat them fried or as a garnish for rice, stews or other ancestral preparations. However, globalization made us export American uses, as well as their restaurants.
We have grown up fascinated by Tony Roma’s ribs or by those of that Southern joint that Frank Underwood went crazy for in House of Cards (in the southern United States, southern-style barbecues are very typical, where, not surprisingly, ribs are usually number one in sales).
Whatever it was and whatever the image was, it was just a guy enjoying and enjoying one of the ribs, but they never gave us the formula for success! Until today… Today, taking advantage of the last moments of the montanera (it is the time of maximum splendor of the Iberian pig) we have managed to get our hands on a whole rack of pork and prepare a recipe for all of you. The key so that, as on television, the bone comes off the meat and comes out completely clean are the two cooking times.
Also, do not hurry if you make a lot of quantity, because nothing else, but the ribs are consumed all over the globe, which gives us endless preparations to enjoy. For example, in this case we are going to make an Asian-style lacquered pork ribs, but that does not mean that with the leftover ribs you can eat them in some good tacos (here you can learn how to make homemade tortillas) or, previously boned, prepare a Krusty Burger in the purest Simpson style.
The line between success and complete failure is a fine line that will be marked by the supreme delicacy we have. You have to cook the ribs for an hour, which will make them very, very tender. If you are not very careful when you take them out, you can run the risk of them falling apart and then, yes or yes, you will have to make delicious tacos in the purest Dabiz Muñoz style.
The good thing about recipes like this is that you can use as many ingredients as products you want to take advantage of. Everything we have at the bottom of the fridge can be used to flavor the broth and all the leftover sauces that are lying around in the pantry can be used for the marinade. Go ahead! How to make lacquered pork ribs
Ingredients
. Pork ribs, 1/4 (if whole) Chiles de arbol or dried chili peppers, 2 pc Anise seed, 1 tbsp Black peppercorns, 1 tbsp Chinese onion (or garlic), 3 pc Peeled ginger, 2 cm Garlic, 1 head Soy sauce, 5 tbsp Sesame oil, 2 tbsp Salt, 3 tsp
.For the sauce
Cooking broth, 1 cup Sugar, 2 tablespoons Light soy sauce, 100 ml Chinese black vinegar or sherry vinegar, 100 ml Ketchup, 4 tablespoons Hoisin sauce, 2 tablespoons
Step 1
Put all the ingredients for cooking the ribs in a pot and cover with water, the ideal is to introduce the head of garlic cut in half to bring out all its flavor in the broth, this will later influence the flavor of the ribs. Close the pressure cooker and cook for one hour, when the valve goes up lower the heat to the minimum. Another option is to cook them in the normal pot, also covered, at minimum heat, for 2-3 hours or until they are very tender.
Step 2
When the ribs are cooked and tender, remove them from the broth with great care so that they do not break. This has to be done with amazing care because they literally fall apart. Reserve in a container suitable for the oven, film and leave to cool completely in the refrigerator, on the terrace or in any cool place. It is important that they take body again and are manageable, so you have to cool them.
Step 3
To make the marinade, pour a glass of broth in a saucepan, the broth from the cooking of the ribs, the rest we can keep it by straining it well for any other preparation. Add the sugar and bring to the boil. Dissolve and reduce with a few rods until we have a kind of syrup. Pour into a bowl and mix with the rest of the ingredients until you get a smooth, thick and uniform sauce. Set aside.
Step 4
When the ribs are cold, glaze with the sauce and bake for 8 minutes at 200 degrees up and down heat. Remove from the oven and re-coat. Bake for a further 8 minutes at the same temperature and enjoy with a fresh salad, rice, chips or some tortillas to make tacos.
