Baked whole marinated kangaroo shoulder, sliced and served garnished with fresh fruit.

Procedure:
1. First prepare the marinade; mix the grated or crushed garlic with honey, soy sauce, orange juice, chili spice and salt, let it stand for a while
2. Stuff the kangaroo shoulder with cloves in several places, salt and rub the meat with the marinade
3. Sear the shoulder on all sides, then reduce the heat source, baste the meat slightly with water and roast until tender, baste the kangaroo meat with the broth and baste slightly with water if necessary
4. Remove the cloves from the roast, cut the meat into slices and serve it generously garnished with various pieces of fresh fruit.
Recommendation:
