Now that summer is in full swing, you may be looking for some new recipes to try out. If you’re in the mood for something light and flavorful, this Johnny Mancotti pasta dish is a great option. Made with just a few simple ingredients, it’s a cinch to throw together. Plus, it can be easily customized to suite your taste.
Here’s what you’ll need:
-1 pound of pasta (I used shells, but you can use any type)
-1/2 cup of olive oil
-3 cloves of garlic, minced
-1/4 teaspoon of crushed red pepper flakes
-1/2 cup of white wine
-1/4 cup of chopped parsley
-1/2 cup of grated Parmesan cheese
-Salt and pepper to taste
To make the sauce, start by heating the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook until fragrant. Then, add the white wine and let it simmer for a minute or two. Add the parsley and Parmesan cheese and season with salt and pepper to taste. Set the sauce aside.
Bring a pot of salted water to a boil and cook the pasta according to package directions. Once it’s cooked, drain it and add it to the skillet with the sauce. Toss everything together until coated and serve warm.
This dish is perfect for a summer evening. It’s light and refreshing, but still filling. And, it’s easily customizable. If you’re not a fan of red pepper flakes, you can leave them out.
