pk olive oil 1 pk red onion 3 cloves garlic 3 pk carrots 1/2 pk celery 1 can peeled tomatoes 250 g brown lentils 2 pk bay leaves 2 pk rosemary pk black pepper 700 ml vegetable broth 200 ml water pk basil pesto

A very simple soup that features the best flavours of Italian home cooking.
1. Heat the olive oil in a saucepan and fry the red onion with the garlic. 2. Add the carrots and celery. Sauté together for about 3 minutes. 3. Then add the tomatoes, lentils, stock and water. 4. Add black pepper, bay leaf and rosemary. 5. Bring the soup to the boil and then turn down the heat. Cook for about 30-40 minutes or until the lentils are soft. 6. Serve the soup warm with basil pesto.
